Bacon Wrapped Green Chile Meatloaf With a Honey Chili Glaze

Ingredients

For the Meatloaf

  • 1 lbs ground beef
  • 2 cups 505 fire roasted green chile
  • 1 red onion, peeled and diced
  • 2 packages sliced bacon
  • 2 cups 505 honey chipotle green chile salsa
  • ½ cup breadcrumbs
  • 1 egg

For the Ketchup

  • 1 cup ketchup
  • 1 cup honey chipotle green chile salsa

Instructions

For the Ketchup

In a blender, blend all ingredients until smooth.

For the Meatloaf

On a baking sheet, lay the slices of bacon flat.  In a blender, blend the honey chipotle salsa until smooth and brush over all of the bacon.  In a large mixing bowl, mix the beef, chile, onion, breadcrumbs and egg until fully incorporated.  Form the mixture into a loaf and place in the middle of the sliced bacon.  Wrap the loaf in the bacon and bake in a 350 degree oven for approximately 45 minutes.  Let cool for ten minutes.    Slice and serve warm with the ketchup on the side.
